Executive Chef Risteard O Corragain Shares a Mineral-Rich Wholefoods Recipe for Everyday Energy

Over the past four blog posts, I've spoken about my philosophy as an Executive Wholefoods Expert Chef, why real food matters, and how nature provides the vitamins and minerals our bodies depend upon.

Now it's time to put that philosophy onto the plate.

One of the questions I'm often asked is:

"What would an Executive Wholefoods Chef actually eat?"

The answer is surprisingly simple.

Colour.

Variety.

Fresh ingredients.

Balanced minerals.

Healthy fats.

Quality protein.

No complicated rules.

One of my favourite dishes combines many of nature's most nutrient-dense ingredients into one satisfying meal.

Mineral Earth Bowl

Ingredients

Base

  • 1 cup sprouted chickpeas
  • 1 ripe avocado
  • Handful fresh rocket
  • Handful watercress
  • 1 cooked beetroot, sliced
  • 2 tablespoons sauerkraut
  • Mixed sea vegetables (dulse or sea lettuce)
  • 2 tablespoons pumpkin seeds
  • Pickled red onions
  • Fresh herbs (parsley and coriander)

Tahini Lime Dressing

  • 2 tbsp tahini
  • Juice of 1 lime
  • 2–3 tbsp filtered water
  • Pinch of sea salt
  • Fresh cracked black pepper



Method

  1. Arrange the rocket and watercress in a large serving bowl.
  2. Add the sprouted chickpeas and sliced beetroot.
  3. Arrange avocado slices around the bowl.
  4. Add sauerkraut, sea vegetables and pickled onions.
  5. Sprinkle generously with pumpkin seeds and fresh herbs.
  6. Mix the dressing separately until smooth.
  7. Pour over immediately before serving.

Simple.

Fresh.

This is my favourite time to enjoy the Mineral Earth Bowl.

At lunchtime, your digestive system is active, making it an excellent opportunity to consume a wide variety of fresh vegetables, legumes and healthy fats. The combination of fibre, protein and beneficial fats helps provide steady energy throughout the afternoon.

Post-Exercise Meal ⭐⭐⭐⭐

The chickpeas contribute plant protein, while the vegetables help replenish nutrients after physical activity. The meal is filling without feeling overly heavy.

Evening Meal ⭐⭐⭐⭐

If eaten for dinner, consider reducing the portion of chickpeas slightly if you prefer a lighter evening meal. The vegetables, healthy fats and fermented ingredients still make it a satisfying option.

It's about making simple ingredients exceptional.

 

Chef's Tip

Aim to include at least five different colours on your plate whenever possible. Different coloured fruits and vegetables contain different naturally occurring plant compounds, helping you enjoy a broader range of nutrients and flavours over time.

Small improvements, repeated consistently, can make a meaningful difference to your overall eating pattern.
